It's simple to prep ahead and made with only three ingredients - chia seeds, almond milk, and stevia. In fact, you can make three servings of this Chocolate Chia Pudding in about 15 minutes.
HOW HEALTHY IS CHIA SEED PUDDING?
Well, it’s packed with goodness!

- phosphorus
- fiber
- protein
- omega-3 fatty acids
- gluten free
One serving contains 11 grams of fiber, 12 grams of carbs, 4 grams of protein and 9 grams of fat. So that means only 1 net carb.
Directions
Chia seed pudding is so easy to make. All you do is mix chia seeds with milk of your choice. I like to play around with the ratio a bit to get a consistency I like or you can just follow one of the recipes below. Generally, I use 2 tablespoon of chia seeds to every half cup of milk.
If you are keto you can add stevia to sweeten to taste or if you are not keto you can use maple syrup or honey. After it is mixed well store it in the fridge overnight or at least three hours. It is set when the seeds swell to double their size.

I have actually been making a chia "oatmeal " at night as my final consumption. I take 4 tbsp chia seeds, 1/4 c goya coconut milk, and 1/4 c unsweetened vanilla almond milk and stir together. I microwave for 1 -1 1/2 minutes. Stir, add Kerry gold butter and a sprinkle of cinnamon. But going to try these all as well.

I’m going to try these for sure! To be a stickler though for the benefit of anyone who is doing keto and isn’t aware- honey and agave are no no’s on this diet. You recommended them as sweeteners along with stevia, which is actually a keto approved sweetener along with monkfruit. The fact that this pudding has 1 net carb is great! As you stated though, it does have 12 total carbs. Ruled.me recommends limiting daily net carbs to 25g and total carbs to 35g per day..

HI again Dee, I reread the post and I can see where what I wrote could be misunderstood. I meant that you could use those sweeteners if you were not doing the keto diet. I have fixed that. I also looked through all the chia pudding recipes again and they all call for keto sweeteners.
