Hi - saw your recipe on the Rainbow Delicious meal plan this week and wondered if roasting the acorn squash is for flavour as much as to soften the flesh? FIVE STARS! I usually hate squash of any variety, but this really blew my socks off! It's really easy to make, and I have made it more than once. This last time, I added a butternut squash, and some bay leaves, and it was fantastic, and thick. It goes a long way, and being in a family of nine, it can last about two days, if we're lucky enough to have some leftovers. Thank you sooooooo much! it's easy to make, and cheap, the most expensive thing is probably the coconut cream, and that is really not much.
