How pretty is this? It's so easy to put together and will look great on any holiday table. The color really pops! The sweetness of the oranges and pomegranate seeds go great with the bitter arugula and pungent blue cheese. It pretty much has all the flavor bases covered.
The dressing is simply made with fresh orange juice which ties all that citrus goodness together. Did I mention the candied pecans? I don't want to even think about them because they are so addictive. Trust me you cannot stop at just one so make sure you get the smallest bag possible and put them all on this Arugula and Orange Salad. You will be sorry if you don't! I got mine at Trader Joe's.

Arugula and Orange Salad
Ingredients
- 4 cups baby arugula
- 1 orange, sliced in circles
- ¼ cup pomegranate seeds
- 2 tablespoon blue cheese, crumbled
- 3 tablespoon candied pecan
- ¼ whole red onion, thinly sliced
Dressing
- 3 tbsp olive oil
- 2 tablespoon fresh squeezed orange juice
- 1 tablespoon orange muscat vinegar (or balsamic)
- 1 clove garlic, minced
- ¼ teaspoon salt
Instructions
- Place all dressing ingredients in a jar and shake well. Add salt and pepper to taste.
- Place all salad components on two plates. Do not dress the salad until you are ready to serve. Enjoy!
