I am trying because I tend to reach for red meat because that's what my kids prefer. Don't get me wrong, I will never be vegan because I believe there are many benefits to eating meat, but I agree there is a happy medium. I need more fish and seafood in my life for sure!
So let's start with this Baked Salmon with Black Rice, shall we? The salmon is simply prepared with salt, pepper, rosemary, and garlic. Using a rice cooker makes this so fast and easy.
Why black rice? Forbidden rice is so much better for you than white or brown rice. It's packed with phytonutrients, fiber, minerals, and protein. It has an earthy flavor and is denser so it has more of a bite. I think you'll be pleasantly surprised by its taste. You can find it in any grocery store these days.
This is the kind of meal that you can easily tweak to mix it up. Add different veggies or try quinoa or brown rice. The cranberries really add a punch of sweetness and taste so good in black rice!

Baked Salmon with Black Rice
Ingredients
- 3 4 oz salmon fillets
- 1 cup black rice
- 2 cups water
- ½ cup sugar snap peas
- 3 tablespoon dried cranberries
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tbsp orange zest
Instructions
- Make rice, place 1 cup of black rice in a rice cooker along with 2 cups water. OR on stovetop boil 2 cups water, add rice and salt. Cook on low until rice is tender, about 30-35 minutes.
- Preheat oven to 400 degrees. Sprinkle salmon with garlic, salt, and pepper. Place on a baking sheet and cook for about 15-20 minutes.
- When rice is done immediately mix in snap peas, cranberries, salt, and pepper. Place salmon on top, add orange zest. Salt and pepper to taste. Garnish with rosemary. (optional)
