I usually keep grilled vegetables in the fridge during the summer months for meal prep. Add them to a salad or quinoa and you've got lunch!
For these Chicken Sausage Skewers with Vegetable, I used Aidells Chicken Apple Sausage which I purchased at Harris Teeter.
I have been eating these for years and I love them. They are simply made with premium ingredients in small batches and it shows. This sausage is full of Washington state farm apples and lots of spices. They are packed with flavor and so versatile which makes them great for quick, weeknight dinners. I just brushed these skewers with olive oil and sprinkled on salt and pepper and that was it. Delicious!

Chicken Sausage Skewers with Vegetables
Ingredients
- 1 12 oz package of Aidells Chicken Apple Sausage
- 1 zucchini, sliced into rounds
- 1 yellow squash, sliced into rounds
- 1 cup mini peppers
- 1 tablespoon olive oil
- salt and pepper
Instructions
- Preheat your grill to medium high.
- Put all vegetables in a bowl and drizzle with olive oil. Sprinkle with salt and pepper and mix well with hands. Be sure all vegetables are covered in oil.
- Assemble skewers. Be careful to keep pieces similar sizes. If some are too big they prevent others from sitting directly on the grill.
- Feel free to drizzle entire skewer with a bit more oil. Place on grill and cook 5-8 minutes on each side. Watch carefully and turn often to prevent burning.
- Serve immediately with rice, quinoa or cauliflower rice and a simple tossed salad.
