You won't miss the gluten or the dairy in this Gluten Free Dairy Free Chocolate Chip Skillet Cookie. This dessert is easy to mix in one bowl and no cookies to scoop out on a sheet pan! {gluten free, dairy free}
It's super easy to make cookies that are gluten and dairy free these days and I promise you won't even notice what's missing. Sometimes you just want to make a quick batch of cookies but you don't want to spend all day scooping out the dough.
This Gluten Free Dairy Free Chocolate Chip Skillet Cookie is quick and easy to mix in one bowl and cooks quickly in the oven.
Ingredients -
- butter - I used Earth Balance and it works great for baking. It's vegan and dairy-free.
- sugar - I used regular granulated sugar in here but I have also made these with coconut sugar. I like the molasses flavor it gives these cookies.
- flax egg - When cooking dairy free I like to use flax eggs. Simply add 1 tablespoon of flax meal to 2 ½ tablespoons of water. Whisk it well and let it set for a few minutes. OR you can use Bob's Red Mill egg replacer.
- Baker's Extract - I used Rodelle Baker's Extract in this recipe and it adds so much flavor. It's a blend of vanilla, chocolate, and caramel flavors and it really adds a little something special to baked goods. OR you can use any vanilla extract.
- almond flour - You guys know how much I love baking with almond flour. It's loaded with nutrients and has a mild nutty flavor.
- gluten free all-purpose flour - I almost always use Bob's Red Mill 1 to 1 Baking Flour. In my opinion, it has the best flavor and creates baked goods that do not taste gluten free.
- baking soda and salt - Make sure your baking soda is gluten free.

Why I like baking with Almond Flour
Almond flour is made from blanched almonds that have been ground into a fine meal. Almond flour is lower in carbs and higher in fat than all-purpose flour. It's better for your blood sugar because it doesn't cause a spike like white flour can.
Almond flour also contains micronutrients like Vitamin E, magnesium, and calcium. A ¼ cup serving of oat flour contains 11 grams of fat, 6 grams of protein, 3 grams of fiber, and 1 gram of sugar. (from USDA Nutritional Database)

Gluten Free Dairy Free Chocolate Chip Skillet Cookie
Equipment
- cast iron pan
Ingredients
- ½ cup vegan butter I used Earth Balance
- ¾ cup sugar or coconut sugar
- 1 flax egg - 1 tablespoon flax meal mixed with 2 ½ tablespoon of water, let set for a few minutes
- 2 teaspoon Rodelle Baker's Extract or vanilla extract
- ¾ cup almond flour
- ½ cup gluten free flour I use Bob's Red Mill 1 to 1 Baking Flour
- ½ teaspoon gluten free baking soda
- ½ teaspoon salt
- 1 cup chocolate chunks I use Enjoy Life for dairy and gluten free
Instructions
- Preheat oven to 375 degrees. Place rack in the center of the oven. Spray a 10-inch cast iron skillet with cooking spray.
- Put butter and sugar into a stand mixer and beat well until fluffy. Add egg replacer and extract and mix well.
- Add almond flour, gluten free all purpose flour, baking soda and salt. Mix well.
- Add chocolate chips and stir.
- Bake until just cooked through in the middle about 25 minutes. Do not overcook.
