This Gluten Free Single Serve Chocolate Chip Cookie will help you get your gluten free chocolate fix. It is soft in the middle and crispy around the edges with a slight coconut flavor. It's perfect for one person but big enough to share with two.
Single-serve cookies are just the best. Often we don't want to spend 45 minutes making a big batch of four dozen cookies and then thirty minutes cleaning up the kitchen. So this treat is perfect for you or you and a friend.
It will satisfy whatever chocolate craving you've got going on, and it's gluten free.
You are five minutes away from this treat with no kitchen clean-up and no need to get out the stand mixer.
Ingredients for Single Serve Chocolate Chip Cookies
- coconut oil - you can sub melted butter or oil
- brown sugar - you can use granulated sugar or coconut sugar if you prefer
- pure vanilla extract
- egg yolk
- gluten free flour blend - I have used Bob's Red Mill 1 to 1 Flour and also King Arthur Gluten Free Flour. Both work well.
- baking soda
- salt
- chocolate chips - gluten free if needed
Instructions
- Preheat oven to 375 degrees Fahrenheit and place the rack in the center of the oven.
- Line a baking sheet with parchment paper.
- Place coconut oil in a bowl and microwave for a few seconds just to soften it. Do not completely melt it.
- Remove for microwave and stir in sugar, vanilla, and egg yolk. Mis well.
- Add remaining ingredients and mix well.
- Divide the batter into two balls and roll. Place on a cookie sheet and bake in the oven for 8-10 minutes. Serve immediately.
Variations
There are so many ways you can make this recipe your own or adapt depending on what you have in the pantry. Use M & M's, butterscotch chips, chocolate chunks, or raisins. Add chopped nuts or dried coconut flakes.
Top with a drizzle of dark chocolate or white chocolate. Enjoy!
For vegan cookies, you can use an egg replacement, and be sure to use coconut oil and not butter. We love Enjoy Life Chocolate Chips which are vegan and gluten free.

Ingredients
- 2 tablespoon coconut oil
- 2 tablespoon brown sugar
- ¼ teaspoon vanilla
- 1 egg yolk
- ¼ cup Cup 4 Cup gluten free flour
- ¼ teaspoon baking soda
- pinch of salt
- 2-3 tablespoon gluten-free chocolate chips I used Enjoy Life
Instructions
- Preheat oven to 375°.
- Put coconut oil in the microwave for a few seconds just to soften it - do not melt.
- Stir in sugar, vanilla and egg and mix well.
- Add remaining ingredients and mix well.
- Roll into two large balls and place on a parchment-lined baking sheet.
- Bake for 8 minutes and check. Bake for a few minutes more for a crispier cookie. I like mine soft in the middle.
