Does anyone else eat waaaay too much when they are on vacation? Something about this beach air that makes me starving! I'm more likely to make poor food choices like chips on the beach and wine every night.
This salad makes it okay for me to pig out on ice cream every night at the Nantucket Juice Bar, right? Hang with me, peeps!
Let's just say I need a healthy salad at the ready. This Summer Chickpea Salad is great because it holds up in the fridge for several days and it packs well in a cooler or lunch bag. It has a super light dressing of olive oil and lemon so it doesn't get soggy.
Need a heartier lunch? Add in grilled chicken, steak, shrimp or salmon.
NUTRITIONAL BENEFITS OF CHICKPEAS (GARBANZO BEANS)
- 15 grams of protein
- 12.5 grams of fiber
- potassium
- Vitamin C
- Vitamin B-6
- selenium

Chickpea Salad
Ingredients
- 2 15 oz cans chickpeas garbanzo beans, rinsed
- ยฝ red pepper diced small
- โ cup red onion diced small
- 1 cup of chopped herbs dill, parsley, and basil
- 3 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 2 garlic cloves chopped
- juice of 1 lemon
- ยผ teaspoon crushed red pepper
- salt and pepper to taste
Instructions
- Toss all ingredients in a large bowl. Add salt and pepper to taste.
